Pancake Mix

This morning I really wanted chocolate chip pancakes. However, my store bought mix expired sometime last February. Who wants to risk it with old pancake mix?

After a quick google search, I found how easy it is to make my own mix. I am never putting pancake mix on my grocery list...again.

1 cup all purpose flour
2 teaspoons white sugar
2 tablespoon baking powder
1 egg, beaten
1 cup milk
2 tablespoon vegetable oil

Combine flour, sugar and baking powder in a small bowl. Whisk egg, milk and oil in another small bowl. Combine egg mixture with dry ingredients.


Want a few pancakes? Store dry ingredients in a zip-lock bag. Take out what you need and add milk to dry ingredients until batter..right consistency. It's hard to explain how pancake batter should be...Too thin of batter makes for weird pancakes. Too thick means underdone 'cakes.

You can also store the moist batter. Just cover bowl and store fridge for a few days. Just add milk to thin mixture out when ready to use.
