1 (.25 oz) dry active yeast
1 cup warm water
1/4 white sugar
3 tablespoons milk
2 teaspoons salt
4 1/2 plus more bread flour
1/4 butter, melted
In a large mixing bowl (use standing mixer if you're lucky enough to have one), dissolve yeast in the warm water. Let sit for 10 minutes. Stir in sugar, milk and salt and add enough flour to make a nice soft dough*...if using standing mixer, use dough hook attachment to mix all ingredients. Knead for 6 to 8 minutes (thank God for Kitchen Aid!). Cover with a towel and let rise until double in bulk, about 1 hour.
Punch dough down. Pinch off pieces of dough to make golf ball sized balls. Place on tray, cover with towel and let sit for 30 minutes.
Preheat grill pan over high heat. Lightly oil.
Roll balls into thin circles. Doesn't have to be perfect, kind of hard to mess up this step.
If your grill pan allows, place two dough circles onto pan. Butter dough side up. Grill until bubbly, 2 to 4 minutes. Flip onto raw side and grill until charred. Remove from grill and place on paper towels. Repeat until all naan has been prepared.
*I used more than 4.5 cups of bread flour. Even kitchen environment is unique...so you're probably going to use a bit less or a bit more. If you end up using too much flour, just add water.
