I love homemade pasta/spaghetti sauce. It's worth all the time and effort, including the hour needed for simmering.
What I hate most about homemade pasta sauce is cleaning the gas range.

Ya know all the little tomato sauce splatters? You know what I'm talkin' about.
(Yes, I could go out and buy a splatter screen. But I'm not a person of unnecessary kitchen gadgets)
Leaving the lid on will cause the sauce to be watery.
(I have come up with a great solution.)
Take a piece of tin foil, big enough to cover the pot/sauce pan. It's ok it's not wide enough...you just want to get the middle where it's most hot...and drape it over the pot. And viola! Steam gets through, yet your range top stays clean-ish.
It was so delicious I could just cry! You are a spectacular cook girl.
