Homemade yogurt parfait

The other day, while running errands, I got hungry. I wanted something light and refreshing. (Fast food just don't do well with me on a HOT summer day.) I decided on a yogurt parfait from Panera Bread.

I forgot how good a REAL parfait can be. (Does McDonald's even use "fresh fruit?" or even fruit?)

Yesterday was my weekly shopping trip. I JUST HAD to get strawberries, blueberries and grapes...and some organic yogurt. Since no parfait is complete with out granola, I made slow cooker granola.

After all the fruits were washed, dried and chopped, I put everything into a big plastic Glad-Ware container. If I am feelin' a snack, I get my container of berries, plop some yogurt and berries in a bowl, sprinkle granola on top...and eat.

(One day I am going to make a bunch of grab n go parfaits and store them in the fridge. I haven't gotten that far yet.)

Slow Cooker Granola (I double this recipe.)
  • 2 1/2 C oats
  • 1/2 C nuts, chopped (I use almonds)
  • 1/2 C dried fruit (I use raisins)
  • 1/4 C honey
  • 2 T butter (or nut butter)
  • 1 t cinnamon

Place all ingredients in slow cooker and set to high for 3 hours. Place a chopstick or other utensil under the lid so it doesn’t close all the way. Check and stir the granola around every 30 minutes, or when it becomes fragrant. Once it looks a bit browned and toasted, it’s ready to go. Turn off slow cooker, let granola cool, then store in airtight bag in fridge.
