This is not so much a recipe. More like use-whatever-you-want-but just make it sure it contains the following....
baby carrots. I use 1 whole small bag of baby carrots.
onions. I like a 2-3 small yellow onions, quartered.
small-med baby red potatoes. Everytime I make a pot roast I use a different amount of potatoes. Why? I don't really know.
dry onion soup mix packet
cup of water
some form of roast meat. English cut roast was on sale the other day...because the roast was cooked in water/moisture...it was the best pot roast I ever made.
Put the meat in the bottom of the crock pot and pile the veggies on top. Then add the soup mix and the water. Set on LOW and cook for 8 hours or so hours.
The key to a good pot roast is "low and slow." It's best to not rush the process of cooking a roast.
