Been a while.

It has been a while since I shared a recipe or talked about culinary things.

After Winter, 2011 I will only have to take 3 more classes+ an internship to earn a certificate of baking. After earning this certificate I have no clue where/what life will take me. I am thinking about some options....
  • 1, 2 or 3 year apprenticeship
  • Try to get a scholarship and go to a "specialty" school. If I find I like the science and art of bread, I'd go to a school for breads. Or something.
  • Get an AA in Culinary Arts.

All my life I've been told to plan. My high school advisors: "Plan your courses to make sure you get into your 'dream' college."'
I think for the first time I am not planning on my future. I don't know if a great apprenticeship opportunity will happen. I don't know if I will get a scholarship and be able to afford $25,000 a program school. I don't know if I really want an associate's degree. To an extent I am planning....to get good grades and other things. But I feel good not knowing about my future.
