My dear husband got this crazy idea (in my opinion all of his ideas are crazy. It's me, not you hun!) to make his very own breakfast burritos.
Our weekly "date night" is going to Costco. We buy a few things and then eat at the food court. Last week, we picked up salsa, eggs, a pack of uncooked tortillas, hunka bag of bacon bits and a big block of cheddar cheese and boxes of those small rectangle things of wax paper.
This weekend we spent a night making and assembling and freezing said burritos.
Step 1: Crack as many eggs as you like into a large bowl. And scramble. Grate as much cheese as desired. (We realized we could have skipped this step if we had gotten the cartons of liquid eggs and pre-grated cheese. But scrambling and grating ourselves was not only cheaper, but fun!).
Step 1.5: Use your standard omelet skillet and cook the eggs in small batches, stack/pile on a plate. Remember the eggs will be hot and if stacked on top of each other, they still will be cooking...so plan accordingly.
Step 2: Cook the tortillas according to package directions. Assembly the burrito using the eggs, bacon bits, cheese and whatever else. One of us cooked the tortillas as the other assembled the burritos and it worked out well.
Step 2.5: Wrap the burritos in the wax paper and tape using some sort of tape that will stick to wax paper. Put into a Ziploc bag and store in the freezer. At night just take out as many as you need and defrost in the fridge.
Step 3: In the morning, heat the burrito to whatever method you like (microwave, pan fry, oven...)
Surprisingly (remember I said his ideas are crazy! I'm such a believer in him, I know! Sorry ;( , they are really good.
These sound delicious! I'd be curious to know the cost breakdown. How many did you end up making? Also I think they need some fried potatoes inside, or beans :)
ReplyDeleteNot sure about the exact cost. It would have been cheaper using regular, cooked tortillas.
