Egg McMuffin

...only better.

One of my favorite breakfast things right now is a homemade egg and English muffin sandwich.

-one egg, any style. I like mine over-hard, runny yokes just freak me out...it's a texture thing.
-honey wheat English muffin
-slice of 2% cheese
-bacon, optional, depends on how healthy I'm feeling that morning

If I decide to have the bacon, I fry that first. Then drain most of the bacon grease and fry the egg...still bacon-y, but not so drenched in fat. I'll toast the muffin in the bacon fat as well. When the egg is almost cooked, top with cheese so it gets all melty.

Assemble as you would a sandwich.
