It's Sunday.
While your husband makes sure the lawn mower works for the up-coming mowing season, YOU cook off all that extra batter.
I plan on freezing the cooked pancakes and throwing them in the microwave (or oven) in the morning.
TA-DA!
I used the pancake batter and I can quickly have pancakes when I feel like it.
Alternatively:
-you can make pancake batter for one. But that never really turns out, does it?
-store the un-used batter in the fridge (it will keep nicely for a few days) and thin it out with milk or water. I wanted a quick easy breakfast anyway. So, I decided to bake n freeze :)
