I love Summer.
I hate Summer.
I love Summer because of all the farmer's markets and fresh fruits and veggies and laziness.
I hate Summer because of the heat and humid-ness (but fresh fruit and excuse of "it's hot, so I can be lazy" make up for everything).
Here's some of my favorite Summer time recipes...
Cherries in Almond Syrup over Greek yogurt. I should note I've never made this, but it looks good...I have a love affair with Greek yogurt.
Not exactly a Summer recipe, but great for those lazy Sundays spent on the porch/deck. Cheddar, Bacon and Chive biscuits NOTE: make them big for sandwiches!
Rice Krispies. No oven needed, just a stove (please don't make them in the microwave!) Not really a recipe so much, but personally I think the marshmallow to cereal ratio is pretty critical. I ALWAYS use Rice Krispie brand cereal and Jet Puff 'mellows.
For that extra Rice Krispie cereal laying around: Chocolate Scotcheroos.
Blueberry-lime jam. When canning, it's critical you use tested recipes. Since canning is meant to preserve foods for a long time...do something wrong and the food can grow bacteria and you'll never know it. SO, five years down the road you have a can of blueberry jam that you break into, yet it's filled with bacteria that potentially make you really sick. Although rare, anything can happen.
Strawberry jam. The link is Pioneer Woman's guide to canning. Scroll down a ways for the jam recipe. I'm very aware of freezer jam. But I don't like "wasted" freezer space. When properly processed canned jam can sit your shelf...forever. And jars are much easier to give as gifts.
On the note of canning: We're going to plant pickle sized cucumbers this year. I'm excited to "make" and can pickles!
