Bad chef and pesto

Apparently I am a bad chef because I haven't been giving credit "where credit is due." From this entry forward credit will be given...

Pesto.

I've never been a pesto/herb person. Herbs are so flavorful. I hate spicy, full of flavor things. This pesto totally blew my mind. Thank YOU Food and Wine (magazine).

Walnut Pesto

1 cup walnuts
1/3 cup loosely packed flat leaf parsley, stems removed
2 cloves garlic, smashed
3 tablespoons grated Parmesan cheese
1/2 cup olive oil
pinch kosher salt
pepper

Whirl parsley, garlic and Parmesan cheese in a food processor until combined. Add olive oil, salt and pepper. Whirl into a coarse puree.
Great tossed with fresh cheese tortellini or other pastas. Since the pesto is kind of thick, reserve some pasta water and toss pesto, bit of pasta water and pasta together.
