Meatloaf

1 lb ground sirloin
1/2 lb ground maple sausage
med. onion, finely diced
2 organic carrots,peeled and finely diced
2 celery stalks, finely diced
spoonful of garlic
2/3 cup organic ketchup
2 eggs
1 cup bread crumbs
olive oil
salt
pepper


Put onion, carrots and celery in a good amount of olive oil and cook until tender. About 10 minutes. Add garlic during the last 5 minutes. When veggies are tender, add 1/3 ketchup.

In a large bowl add meats, bread crumbs, eggs, salt, pepper and sauted veggies. Mix with hands. It's really best to avoid over mixing.

Shape into an 8x6 loaf. You could put this sucker into a standard bread pan. But it gets greasy and gross. ANYWAY, pour remaining ketchup over loaf and cook at 350* for an 1 hour-1 hr and 15 minutes. Once out of oven, cover loosely with tin foil for 5 minutes before eating.

Best served with lots and lots of ketchup and smashed red skins.
